Mixed Spice Biscuits This recipe came about because we didn't have the right ingredients for what Dan really wanted to bake, but as Tracey has got a huge weakness for biscuits we improvised.
Dan actually wanted to bake Ginger Nut biscuits, but as we had no ground ginger, Tracey suggested using mixed spice instead - WOW!!!
So, to make 18 biscuits you'll need:
- 110g Self Raising Flour
- 50g butter, cubed
- 40g of brown sugar
- 1 rounded teaspoon of mixed spice (use ground ginger if you want ginger nut biscuits)
- 2 tablespoons of golden syrup
Step 1 - preheat your oven to 180 degrees C
Step 2 - put the sugar, flour, mixed spice and butter into a food processor and blend the mixture until you get a breadcrumb texture.
Step 3 - add the syrup to the mixture in the food processor. Now start your blender and keep mixing until a soft ball of "dough" forms.
Step 4 - divide the single ball into 18 small balls and arrange them on a baking sheet. Allow plenty of space between each of the balls as the biscuit will spread out.
Step 5 - place the baking sheet into the oven for between 15 and 20 minutes.
Step 6 - when ready, remove the baking sheet from the oven, put the biscuits (which will be soft) on to a cooling rack. They harden off when they cool.
Step 7 - this is the hard bit - wait for the biscuits to cool down before eating them!
